I made a Coconut, Lime, Strawberry & Jalapeno Pepper Rice Pudding for a Christmas party at my moms bar.
I used coconut milk instead of regular milk, shaved coconut, dehydrated strawberry's because fresh were out of season, grated lime zest, and the jalapeno peppers were cut into tiny minced bits.
I soaked the strawberries in rum over night to help give them some life and a bit more flavour.
I'm not a big fan of rice pudding, so I was surprised at how creamy and tasty the recipe turned out to be. It was like having a Strawberry-Lime Daiquiri with a spicy kick and just not as cold. LOL
This must have been 20 years ago since I made the recipe. I'm sure it was a recipe I found in a book or magazine. The rum soaked strawberries would have been my own personal touch to the recipe,
The recipe was made with white rice instead of brown rice. s long as it's not Christmas time, you may use substitute brown rice for white rice. :))
Brown rice may require a bit more liquid or longer time to cook.
