    You must find the lowest common denominator for 7/8 and 1/4.  That would be 8, (2x4, 1x8).  The 7/8 doesn't change, but you change the 1/4 by multiplying the numerator and denominator by 2   2 x 1  = 2; 2 x 4 = 8.  1/4 becomes 2/8.


    Now, you can easily subtract.  2/8 from 7/8 leaves 5/8. 3 from 7 leaves 4.


    7 7/8 - 3 1/4 = 7 7/8 - 3 2/8 = 4 5/8.   :D 

    Actually, I came up with the same answer as Bob but, I did it in my head.....
