You could use a hollow drill called a trephine to cut out a plug of wood so you could do your dendrochronology. Probably best to replace the plug in the tree.
I have heard about this way Norm,how accurate is against Julies answer,or are the two capatable,??
It's 100% accurate Hec, Julie's answer lists trees that don't grow in the UK so not comparable.
