A couple of recipes below. Both recipes look good, but you'll have to put a little more effort into making the second one.

You could also cut them into smallish chunks and toss them into quacamole' with some tomatoe pieces.... some folks also add cubed cukes ... a major salad sensation that doubles as a great tortilla/nachos dip ... don't forget the hot peppers! I add a few tablespoons each of sour cream and mayo to the mix with a big squeeze of lime, sea salt and blk pepper dashes ... now let's eat!!

Funny, I just had the luck by having about 2 dozen come up! I bake them and add them to salsas. Delicious. They make a good base for stews...... Oops, I just re-read, you WANT to make salsa. I make the best and my secret is tomatillos. Bake 1 part to 3 tomatoes, with them throw in several kind of peppers, add garlic. Blend all together with raw onion and raw garlic. Add salt to taste and a little bit of sugar. Refrigerate. This is better the next day.....
