Your plums will continue to ripen if you don't refrigerate them. They are generally a little too hard for me when I buy them, so I don't refrigerate them. BUT, they ripen quickly, so don't buy too many at one time or you'll need to make a plum pudding (or pie) before you can eat them all. You can refrigerate them when they have softened, but again, don't leave them too long.
