This has to be the most asked question in the history of Mankind & still a good one.
Those that wrote it, as in putting a pen to paper, were righteous man of old. Moses down through time to John who wrote the Book of Revelation. That being said, It was Jehovah God that inspired(told) them what to write. We know this for many Scriptures saying all Scripture is inspired by God. Many of the Bible writers didn't even understand what they were putting down. It wasn't for them to understand it, it was for our time, such as the Book of Revelation.
(2 Timothy 3:16, 17) All Scripture is inspired of God and beneficial for teaching, for reproving, for setting things straight, for disciplining in righteousness, 17 that the man of God may be fully competent, completely equipped for every good work.
i would have to say thousands and thousands. old testament - probably many right there, it's to think to all have happened once. new version, same thing, but re-written. and of course that was modified throughout the years, adding wings to angels, adding more details about hell when dante put his foot in. and each time it's copied it's altered again, no way to know how many times it's been really changed.
the current one changed all the HE's to THEY or THEM to seem fairer.
and of course there are about a 1000 different versions of chrisianity since no one seems to agree on the story and they re-wrote their own versions who knows how many times.
maybe god helped them each time... wink wink
