Where I work we are usually paid at the end of every month. We have been paid upto the end of April but only paid for 2 weeks in May and 2 weeks in June so they have kept a month's from us saying that we can have it when we leave. I want to know if this is legal and also how will it affect my national insurance contributions as they have not deducted any from my salary for May and June.

In Canada this is not legal. If you are paid monthly then you should receive your full pay cheque at the end of each month within a very short period of time after the pay period ends. A very short time.
Contact the labour relations board in your country or go on line. All this information is available to you as a citizen of the country you live in excepting a few.
