Types of Fat in Olives
The best thing about olives is the type of fat they provide. Almost all of the fat in olives is monounsaturated. Not only do you not have to worry about your cholesterol levels, but you can be assured that if you replace saturated fat with the healthy monounsaturated fat that olives provide, your "good" HDL cholesterol is likely going up, while "bad" LDL cholesterol takes a dive. The monounsaturated fat found in olives also might help to stabilize blood sugar levels, as well.
