I make a variation of Country Bumpkins. Baby spinach, feta cheese (or a similar tasting cheese), sliced strawberries, sliced almonds and a Raspberry Walnut Vinaigrette. It is awesome- especially in the summer! & it is so easy to make!!!

I love cilantro and baby spinach, with real homegrown tomatoes and onions. Sometimes iI crumble a hard boiled eggt over it and use only fresh lemon juice and olive oil for dressing

A Vegetable salad for me is colslaw, curcumber. cherry tomatoes, small slices off red capsicum,lettice , beetroot, carrots, celery, sometimes a boiled egg, with a small amount of French Dressing or mayonnaise.

Yours is one of my all time favorites but last sunday I made a massaged kale salad for the first time and I was asked to make it again this weekend... mmm... mmm. Tomatoes MUST be either homegrown or organic from (real) famer markets.

I have never had your salad. What is the recipe if you don't mind me asking?
Black bean, diced red onion, garlic, cilantro, celery, fresh tomato, black pepper in an olive oil and balsamic vinegar dressing. Outstanding and delicious and very satisfying, has staying power without the "meat". Never tire of it.

This one's deluxe...chopped broccolli crowns with minced purple onion and whole green or red seedless grapes and sunflower seeds all gently slathered in coleslaw dressing...darn!...2:51 am and for some reason I'm starving...

Rabbit Food!! :) I like Italian, I make my own dressing - I like most all dressings but nothing with mayo in it.. No Blu Cheese either. Yuk! And please no Ranch!! Barf!

Those Ceasar Salads are probably my favorite. Pass on the anchovy paste, though.
I have a great recipe for a simple pasta salad that is deeeeelicious. I think I'll make it when I get home.

mixed salad leaves,roma tomatoes cut in half, watermelon seasoned with black pepper, Spanish onion, lots of fresh herbs, olives and crumbled Greek feta (or grilled Saganyaki cheese) with a vinaigrette dressing topped with pomegranate seeds, very nice with fillet steak or chicken.....or fish

I like mostly all salads. I like cold slaw from Kentucky Fried Chicken. I like a salad from Trader Joe's which is spinich, dried cranberries, walnuts, cheeze and dressing. I use various things in my salads, spinach, lettuce, advocado are staples. I like olive oil and lemon juice for dressing.

MASSAGED KALE SALAD
Ingredients
1 bunch of kale (black kale is best); stalks removed and discarded, leaves thinly sliced. Any kind of baby kale is the best, no need to remove anything.
1 juice from one lemon
1/4 (or less) cup extra-virgin olive oil,
Kosher salt
2 teaspoons organic guava syrup
2 teaspoons of dry cranberries or blueberries
Freshly ground black pepper
1 papaya or equivalent of large Mexican papaya diced small (about 1 cup)
2 rounded tablespoons or so (small handful) of toasted pepitas (pumpkin seeds) or sun flower seeds or walnuts
Directions
In large serving bowl, add the kale, half of lemon juice, a drizzle of kosher salt. Let it sit for up to 5 minutes Massage until the kale softens, gets dark green and little wet for 1 to 2 minutes. Set aside while you make the dressing.
In a small bowl, whisk the lemon juice with guava syrup and freshly ground black pepper. Stream in the 1/4 cup of oil while whisking to form the dressing.
Pour the dressing over the kale, mix it up. Place the desired amount on white large salad plates. Top it with papaya and the toasted nuts Sprinkle additional salt and black pepper if needed.
