There may be someone in your community who is bi-lingual in English and your first language.  You could write your love letter in your preferred language and ask the other person to translate it for you to give to your husband.  If there is a community college nearby, perhaps one of the instructors can translate for you.  

It might be fun to just write it in your language and give it to him.  Then he can try to read it out loud.  You can help him with the pronunciation of the words, and you can together figure out what you are trying to tell him.

What's wrong with just plain "I love you, honey."
