Take the bok choy out of the refrigerator.Throw away any moldy, brown discolored, mushy, bok choy.

Cut the ends of the bok choy if the ends are brown color.  If the ends are white, it's OK to leave the ends

Break the bok choy into pieces using a knife without ridged edges.

Holding a piece of bok choy on the left hand, take the knife on the right hand and break the bok choy by twisting the wrist in a counter clockwise motion.  The knife is not cutting the bok choy; rather the knife is tearing the bok choy into pieces.

Reverse the hands if you are a left handed.

Length should be between 1 1/2-2 inches.

Repeat to cut and break all the bok choy

It's OK to keep the middle piece.

Personally, I don't like the flower.  You may throw away the

    • Bok choy can be really dirty.

    • Fill the bowl containing the bok choy with water.

    • Don't fill the bowl with water at the top to prevent the bok choy from falling down into the sink.

    • Using one or both hands, pick up some bok choy and then drop the bok choy back into the water.  Repeat about three to five times.

    • Using the pick up and drop technique, water is being moved around the bowl.  The power of the moving water removes the dirt from the bok choy.

    • You may have to directly rub the bok choy to remove the dirt.

    • Place the bok choy into a colander   Another bowl can be used as a substitute.

    • Repeat to clean all the bok choy.

    • The dirt removed from the bok choy is on the bottom of the bowl (left side of photo), the bowl that contained the cut bok choy.

    • Suggestion:  Use a taller bowl or pot to clean the bok choy because the taller height better separates the bok

    •

      • Dump the water from the bowl outside the home or apartment, rinse the bowl again to remove any remaining dirt, and fill the bowl with clean water.  The reason why the water should be dumped outside is to prevent the dirt from clogging the plumbing pipes.

      • Repeat the cleaning for a second time (top side of photo) and place the bok choy in another bowl (bottom side of photo).

      • If the bok choy is still dirty, repeat the cleaning process.  Make sure the bowl has clean water for the third wash.choy and the dirt settling on the bottom.

    • Fill the water with 1 inch of water and boil.

    • When the water is boiling, place the clean bok choy into the pot.

    • Cover the pot.

    • When steam is coming out of the pot, the bok choy is ready to eat.  Remove the bok choy and place in a bowl.

    • The longer the bok choy is cooking, the softer the bok choy are.

    • Suggestion:  You may start boiling the water earlier to shorten the cooking time.
