    I friend of mine brought me a large amount of pork loin. how do I fix it other than frying it.

    Pork tenderloin...I thin slice onion and wrap it around the tenderloin then wrap it in bacon (I know it's a heart attack waiting to happen)...I add butter, mustard, tarragon (fresh), parsley (fresh),  worcestershire sauce a splash of olive oil, salt and pepper, a dash of ceyenne and bake in a slow oven...when it looks as if you have about one half an hour to go add whole mushrooms, a bit of wine and chicken stock.  When the pork is very close to done...I take it out of the roasting pan...brown it in a pan on the stove with bacon and onions in place...then tent.  I make a gravy with the stock and mushrooms....add more wine.... With potatoes cooked as you like and a side of veggies of your choice.


    This never fails.

    Bake it like a roast.
