If you set the thermostat too low and don't allow the unit to "rest" it can build up ice in high humidity conditions. Set the thermostat so the unit turns off after 15-20 minutes. After a few cycles, turn the thermostat a little bit lower and again allow the AC unit to cycle & so on until you attain the desired temperature. If you build up ice in normal operating conditions perhaps it is undersized for your requirements ...
