I use every variety of pepper that I can find, some less than others, all fresh, steamed, skinned and deseeded. Also mushrooms, sliced and sauteed lightly in butter. Two egg yokes and 3 whole eggs wisked to a froth with 3/4 cup whole milk. 6 fried bacon strips patted dry after frying and crumbled. 3/4 cup of monterey jack cheese cut in 1/2 cubes. A 14 inch round pan. Heat oven to 350 F.
Oven on, Butter the pan and warm to melt, not hot. Spread the bacon over the bottom of the pan distribute the peppers and mushrooms also. Pour the frothy milk and eggs into a spoon so as not to disturb the ingredients on the bottom of the pan. Distribute the cheese and back on the top rack for 25 minuets or until the egg mix is set.
