Some foods become hazardous very quickly, usually sweet warm deserts, turkey spoils faster than chicken. Salty foods like some brands of bacon and jerky can last for months. Pickles and relish are usually safe if stored in refrigerators. The sweet-sour combination in mod pickles have a long shelf life after opening and may mould without spoilage. Before refrigeration leftovers were often stored in the containers they were cooked in for a day or two with a lid on the pot. This required a carefully followed procedure to ensure no live bacteria is in allowed in the container after the first meal. The pot is heated with the lid in place. Reheat the pot with the lid on to the boiling point. The lid must fit firmly and seal shut as the pot cools after reheating. Leftovers were also often stored in a hot , cooling oven over night to be added to the breakfast fare in the morning. This was a tradition in the orient where pork fried rice is a traditional breakfast dish….or whatever was left-over from the previous dinner.
