        To draw out the liquid and improve the texture. Do the same with eggplant to draw out the bitterness. Place these veggies in a colander, maybe lined with paper towels. You'll be amazed by how much liquid there was. Cucumber sandwiches must have reduced bodies and are the best with a touch of mayo.....

          my mom soaked them over night in saltwater and onions, etc. to make a cucumber salad the next day. It makes the cucumbers more soft, limp, and tasty .
